Drinks & Cocktails with Islay Single Malt Scotch

Islay, otherwise known as “Queen of the Hebrides” is typically associated with smoky, peated whisky that’s typically consumed neat, or on the rocks.

In cocktails, we usually reach for bourbon to make whisky-based drinks like the Old Fashioned and Whiskey Sour. We only use a splash or two of Islay single malt scotch when we want to lend some of that complex peated and smoky character to fruity, sweet and tart drinks like the Penicillin and Absolut Smoked Pineapple.
