Aquafaba AKA Chickpea Brine
Did you know that chickpea brine can be use as an egg-white substitute? Its true! In fact, Chickpea Brine (AKA Aquafaba) is so good as a stand-in for egg whites that you can use it to make vegan meringues! So, the next time you make hummus, reserve some of the Aquafaba and use it to make a vegan Vodka Sour!

Pickle Juice
Yes, we understand that drinking pickle juice might sound absolutely disgusting, but this is one of those cases where you need to try it to believe it. Some of you may already be familiar with the immensely popular Pickleback shot, but if a straight shot of pickle juice sounds too hardcore, we recommend that you start with our signature Pickle Brine Bloody Mary.

Cores, Peels and Rinds
If you’ve ever made drinks at home, you’ve probably noticed that you end up with a bunch of leftover rinds and peels at the end of the night. These bits still contain a lot of flavor and they can be used to make flavored syrups, bitters and even cordials!

Our favorite way of using leftover rinds, peels and cores is to make what’s known as an Oleo Saccharum. Just place your assortment of leftovers into a jar, cover with sugar and store in the fridge until all sugar granules have dissolved. This gives you a syrup with the cleanest possible taste of the ingredients you’ve put into it. Use your Oleo Saccharum to create your very own custom Vodka Collins!
