Mint syrup is a simple syrup infused with the flavour and aroma of fresh mint. To make your own mint infused simple syrup, start by adding equal parts sugar and water to a pan. Bring the mixture to a simmer, and stir gently until the sugar is completely dissolved. Once the syrup is cooled completely, add fresh mint and let rest in the fridge overnight. Remove the mint, and keep in the fridge until ready to use. Use your mint syrup to make a minty Citron Pressé, Vodka Collins or Smashing Fizz!
