A brief American History lesson: from 1920-1933, a law against selling alcohol drove the bar scene underground. During that era, NYC may have had 100,000 speakeasies, and more than a few Gatsbys. Liquor quality was poor, so bars came up with creative ways to mask the taste making inventive cocktails to flourish. Today these drinks are back, better than the originals.
